Toffee Crunch Dip with Apple Slices

Ingredients:
  • 8 oz cream cheese (I used 1/3 less fat)
  • 1/2 cup of brown sugar
  • 1/4 cup of white sugar
  • 1 tsp vanilla
  • 4 oz Heath toffee bits
  • Red apples, sliced
  • Green apples, sliced
Directions:

Combine the cream cheese, brown sugar, white sugar, and vanilla together until mixed thoroughly. Add the toffee bits and stir. Serve with sliced apples.

Avocado and Corn Salsa

Ingredients:

  • 2 ears of sweet corn (I used a can of sweet corn, drained)
  • 1 tomato, diced
  • 1/4 red onion, diced
  • 2 ripe avocados, diced
  • 1 red jalapeno, seeded and finely diced (I used a green jalapeno)
  • Juice of 1-2 lime
  • 2-3 tbsp fresh cilantro, chopped
  • Sea salt and freshly cracked pepper, to taste
Directions:
Shuck the corn and slice the (uncooked) kernels off the cob. Dice tomato, red onions, avocado, and jalapeno. Gently combine all ingredients in a bowl along with lime juice and cilantro. Season well with sea salt and freshly cracked pepper to taste. Enjoy.

Meatloaf Muffins


Ingredients:
Ground beef, lean, 16 oz
Lipton Soup Mix, 1 packet
Rotel, 1 can
*Ketchup, 4 tbsp
Heavy Whipping Cream, 2 tbsp
Bread crumbs, dry, grated, seasoned, 1 cup
Egg, fresh, 1 jumbo
Worcestershire Sauce, 3 tsp
Salt, 1 tsp
Pepper, black, 1 tbsp
Cider Vinegar, 1 tbsp
Brown Sugar, 6 tsp packed

Directions:

Combine all ingredients in a mixing bowl, except 1 T of the ketchup, cider and brown sugar. Using your hand works best! Fill 12 muffin tins. Mix remaining ketchup, vinegar and brown sugar in a small bowl. Spoon over muffins. Bake 350 for 30 minutes.

Broiled Tilapia Parmesan

Ingredients:
  • 1/4 cup Parmesan cheese
  • 2 tablespoons butter, softened
  • 1 tablespoon and 1-1/2 teaspoons mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1/8 teaspoon dried basil
  • 1/8 teaspoon ground black pepper
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon celery salt
  • 1 pound tilapia fillets  
Directions:

Preheat your broiler. Grease a broiling pan or line pan with aluminum foil.

In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.

Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

Makes 4 servings.

Ranch Turkey Burgers

Ingredients:
  • 1 lb lean ground turkey
  • 1 (1 ounce) envelope dry ranch dressing mix
  • 1 cup shredded cheddar cheese (low fat)
  • 1/4 cup chopped green onion (scallion)

Directions:

Mix all ingredients together in bowl. Form into 6 patties. Cook in skillet or on grill until cooked through, appox. 6-7 minute per side. Serve on buns.
